Flu,flu go away!!

We have been sick with what we think is the flu, first Kelly came home with a sour throat, super tired, and a high fever. Then Chad came home with the same symptoms. Both kids stayed home from school which led to more stress for them because you have to make up all homework and schoolwork when you are sick, so sometimes it doesn’t pay to be sick. I know why kids go to school sick! It's just not worth staying home. I felt so bad for them. And then my husband came down with it. And I though I was going to loose it I have been in the house for two weeks with my sickens and now him.

Pumpkin Cheesecake

I made this Pumpkin Cheesecake the other day and it was SO GOOD! It's a recipe I got off of www.foodnetwork.com
Crust:
1 3/4 Cups graham cracker crumbs
3 Tab light brown sugar
1/2 teaspoon ground cinnamon
1 stick of butter
Filling:
3(8oz) packages cream cheese, at room tem.
1(15 oz) can prueed pumpkin
3 eggs plus 1 egg yolk
1/4 cup sour cream
1 1/2 cup sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon fresh ground nutmeg
1/8 teaspoon ground cloves
2 teaspoon vanilla extract

Preheat oven to 350 degrees F.
For crust:
in medium bowl, combine crubmbs, sugar and cinamon. Add melted butter. Press down flat into a 9-inch springform pan. Set aside.
For filling:
Beat cream cheese untill smooth. Add pumpkin puree, eggs, egg upld, sour cream, sugar and the spices. Add flour and vanilla. Beat together untill well combined.
Pour into crust. Spread out evenly and place in oven for 1 hour. Remove from the oven and let sit for 15 minutes.

Cover with plastic wrap and refrigerate for 4 hours.
